One must go up to over 800 meters altitude, in the valley of Ronchi,
in order to reach one of the highest
vineyards in Italy: it faces south-west, and is situated on a steep
hill, surrounded by woods. This grape
variety comes from a cross between Riesling and Sylvaner. The result
is a wine of superior quality, which
is refined, and it is this finesse that makes it so seductive.
Sensory profile: straw yellow in colour with green hues. Aromatic
bouquet with scents of apple skin,
white peach and barely perceptible honey. On the palate it is sapid,
fresh, lightly aromatic and persistent.
Food pairings: indicated for consumption throughout the entire day,
is combined well with first courses
with crustacean sauces, roasted or fried fish.
Service temperature: 10 - 12° C.
Production zone: Ronchi di Ala hills , in Trentino (800 m. altitude).
Grape varieties: 100 % Müller Thurgau
Soil composition: indigenous and very complex,mainly composed of marly
and calcareous stones.
Vineyard - Growing systems and principal training forms: Guyot, with
frequent pruning to control
production. Soil management with mechanical work on the line and planted
grass between the rows.
Protection againt parasites and other cultivating interventions, respecting
the environment.
Harvest: manual according to the maturation curve normally in the
last ten days of September.
Vinification: cold maceration of the grapes in an oxygen free environment
and soft airbag pressing.
Fermentation at a controlled temperature in stainless steel and maturation
on yeasts up until bottling
in the Spring.
Storage: in standing bottles when consumption is expected within a
short time. Otherwise it is suggested
to lay the bottle down at a temperature as close as possible to 16
- 18° C in the dark.
Bottle and content: bordolese bottle of 0,75 lt.
Packaging: box containing 6 bottles positioned vertically (12 for
the market in the U.S.A.).
