Thanks to the exceptional position of these vines,that are exposed
to the sun from morning to early evening, we
chose to produce the Gewurztraminer at a high altitude among the woods
of Valle dei Ronchi. The small bunches
of this grape,mature perfectly to obtain an extraordinary wine that
is distinct,aromatic and long lasting.
Sensory profile: intense yellow in colour with golden flecks.On the
nose it astounds you with its aromatic
richness, scents of spices,fruit and roses.In the mouth it is smooth
and velvety,with a decise structure and
persistence.
Food pairing: it is ideal as an aperitif,accompanied with parmesan
slivers.It is a nice accompaniment with
tasty first courses,crustaceans, soft and flavorful cheeses.
Serving temperature: 10-12°C.
Production zone: Ronchi di Ala(Trento) 820-900 meters a.s.l.
Grape varieties: Gewürztraminer 100%
Vineyard-growing systems and principal training forms: Guyot with
plant density of 5600
vinestocks per hectare,facing south-west.
Harvest: completely manual,in 20 kg trays, the middle of September.
Vinification: the grapes are collected in small trays and manually
placed into the press.Here the grapes are left
to macerate in the must over night.After 8-10 hours of maceration,the
grapes are then pressed.The fermentation
takes place from 10 to 15 days in cement tanks and it is maintained
between 16 18°by circulating cold spring
water.The wine is refined for 4-5 months upon yeasts with frequent
batonage.The fermentation temperature in
cement tanks, is controlled by circulating spring water that is constantly
nine degrees and lasts six to ten days.
Conservation: in standing bottles when consumption is expected within
a short time. Otherwise it is suggested
to lay the bottle down at a temperature as close as possible to 16-18°C.
in the dark.
Bottle and content: Bordolese bottle of 0,75 lt.
Packaging: Box containing 6 bottles positioned vertically.
