Cuslanus - Amarone della valpolicella - D.O.C. - Classico

The history of Amarone dates back to antiquity, and therefore this truly rich red deserves considerable respect. The secret of Amarone lies in its strength, tamed by balance. Amarone results from an alchemy of environment and know-how, whereby any tricks or shortcuts would ruin the wine. Tasters are readily enchanted by this severely limited, exclusive production.

Sensory profile: Intense ruby red in colour. On the nose it gives a sweet fruity perfume of prune and black cherry .It is elegant and full bodied. In the mouth you perceive a smooth but definite character, with a sustained acidity and sweet tannins, necessary for a long evolution.
Food pairings: Perfect with autumn and winter plates, like braised, stewed and roast meats or game. Also goes well with cold cuts, seasoned cheeses and local plates like pasta with beans or risotto all' Amarone. It is also a capital meditional wine.
Service temperature: 18 - 20¡ C.

Production zone: In the hills of Marano in Valpolicella (VR), at 360 meters above sea level. The drying process occurs in a fruit storage area at 650 meters above sea level.
Grape varieties: Corvina, Rondinella and Molinara
Soil composition: The result of landslides has left the area with soil that has a characteristic brown-red colour, with a basaltic base, limestone and high content of potassium and phosphorus.
Vineyard - Growing systems and principal training forms: Old ÒpergoleÓ on walled stone terracing.
Harvest: Manual, in early October in 4 kg (12 pound) trays.
Vinification: The selected grape is laid in trays and placed in a well aired and dry storage area for drying. In January the grapes are softly pressed and the must begin a long and slow fermentation in contact with the skins for approximately 30 days (maceration). The entire fermentation process proceeds for 90 days. After this, the wine is placed in oak casks until bottling.
Storage: In standing bottles when consumption is expected within a short time. Otherwise it is suggested to lay the bottle down at a temperature as close as possible to 16 - 18°C in the dark.
Bottle and content: Borgognotta Amarone Classica of 0,75 lt or a Magnum of 1,5 lt.
Packaging: Box containing 6 bottles (12 for the market in the U.S.A.).
