This wine is for people who love intense aromatic flavors. The grapes are cultivated such that each plant produces only a few bunches. Already on the plant, special complex hints start to develop, which are rich in reminders of spices, clarity, detail and great body. It is only by concentrating on the grapevine that such a surprising Sauvignon can be created.
Sensory profile: Straw yellow in colour with flecks of light green. Typical aromatic scents with primary hints of pepper and sage. In the mouth there is rich tropical fruit and it is extremely balanced.
Food pairings: Ideal accompaniment for warm hors-d'oeuvres and fish with sauces. It is fantastic with any asparagus based dish.
Service temperature: 12 - 14¡° C.
Production zone: Campo Napoleone in Dolc (VR)
Grape varieties: 100 % Sauvignon Blanc - Age of the Vineyard : 25 years.
Soil composition: Warm morainic soil of medium fertility.
Vineyard - Growing systems and principal training forms: Characteristic double "pergola trentina" with rigorous winter pruning, and intervention on the vegetation for leaf control apparatus and production. Protection against parasites and soil management respecting the environment.
Harvest: Manual, around mid September .
Vinification: Pressing the stemless grapes with maceration of the skins at low temperature for 10 hours. Separation of the skins by low-pressure pressing and long fermentation at 18° C in stainless steel tanks. Maturation in contact with its own yeasts and partial malolactic fermentation.
Storage: In standing bottles when consumption is expected within a short time. Otherwise it is suggested to lay the bottle down at a temperature as close as possible to 16 - 18° C in the dark.
Bottle and content: Bordolese bottle of 0,75 lt.
