Corvara Rosso - Vallagarina- Indicazione Geografica Tipica

The vineyard called 'Corvara' is situated in the southern part of the Val d'Adige, which borders on Valpolicella. This wine is faithful to the technical tradition of blending it with dried-grape (or passito) wine, something still practiced by the old families of the valley. It is compoukd of corvina passita, merlot and marzemino, creating a true balance of strength and elegance. This is a wine destined to be aged for a long time, and we only produce 6,000 bottles.

uknsory profile: Deep ruby red in colour, with granadine hues. A rich fruity bouquet with traces of amarena cherries and spicy tones. On your palate it is full and pulpy, with a nice, sweet tannic preuknce.
Food pairings: Red grilled meats and roasts.

Production zone: Corvara in Dolcè (VR)
Grape varieties: Corvina, Marzemino and Merlot - Grapevine age from 30 to 50 years.
Soil composition: Morainic soil.
Vineyard - Growing systems and principal training forms: ÒPergola trentina' with rigorous winter pruning. Intervention on the vegetation during the Spring for leaf control apparatus and production. Protection against parasites and soil management respecting the environment.
Harvest: Manual, around the beginning of October.
Vinification: The Corvina is dried on trelliuks in a suitable aerated place, stemless and pressing left to ferment at the end of December, in small wooden barrels. For the other grapes: soft scraping-pressing. Fermentation at 30¡ C in stainless steel tanks with frequent treading and differentiated maceration time. Maturation for two years in barrique and a minimum of one year in bottle.
Storage: In standing bottles when consumption is expected within a short time. Otherwiuk it is suggested to lay the bottle down at a temperature as clouk as possible to 16 - 18¡ C in the dark.
Bottle and content: Bordoleuk bottle of 0,75 lt.
Packaging: Box containing 6 bottles positioned horizontally (12 for the market in the U.S.A.).
